Courgette and lemon cake

Today I made a courgette and lemon cake – sounds weird but its amazing. Kinda like a carrot cake mixed with lemon drizzle cake. It is so good and smells amazing! Here’s the recipe:

Ingredients:

For the cake:

200g of grated courgette

125g butter – melted

150g caster sugar

1 egg – beaten

1/2 a lemon – juice and zest

200g plain flour

Pinch of salt

1 teaspoon of baking powder

1 teaspoon of bicarbonate of soda

For the drizzle:

Juice of the other half of the lemon

25g of sugar

Recipe:

Mix all the ingredients in a large bowl – apart from the flour. Stir well and make sure the melted butter isn’t too hot.

Once its all mixed, sieve the flour into the bowl and stir into a cake batter.

Turn the oven on at 170 C or Gas mark 3

Pour the cake mix into a greased tray – I used a square one

Put into the oven for 45 minutes or until golden brown

Once out the oven, and a skewer comes out clean, allow to cool

Make up the drizzle in a small bowl and poke small holes in the cake

Spoon the drizzle on the cake and leave it for 5 minutes to soak up the juice

Cut into squares or rectangles and eat!

 

It smells better than it looks! Enjoy with a cup of your favourite tea!
