How To Get Veggies In Your Meals Without Noticing

Everyone is starting diets this time of the year, but I hate that word. I see it more as a lifestyle change. I’ve put together a few ways you can eat more vegetables without even noticing.

One of my favourite things to do is make crispy kale. All you need is a bag of kale, some oil and some salt. Place the kale spread out on a baking tray, drizzle with oil and a sprinkle of salt and pop it in the oven for 10 minutes and then you have crispy kale! You can experiment with different spices and flavours, but I like it with just salt because it tastes like the crispy seaweed you get from a chinese takeaway!

Adding small, chopped up vegetables to dishes like spaghetti bolognese is easy and you won’t even notice its there! I like to add chopped up carrots, celery and sometimes pepper. If it’s really small and cooked well, you won’t even notice it!

Cauliflower pizza base is a good way to include vegetables in your favourite meals. All you need is a cauliflower, 2 eggs, cheese and seasoning like garlic powder, oregano and salt. Put the cauliflower in a food processor and once its been blended, steam it until soft. Combine all the ingredients in a bowl and mix. Then form it into a circular shape and bake for 20 minutes. Add your toppings and there you go!

I also love a cheese toastie. My go-to filling for this is cheese and beans, but this has no vegetables in what-so-ever. If your the same as me and want to add more vegetables into your diet whenever you can, then try adding some to sandwiches and toasties. Tomato and spinach can be a nice addition to a cheese toastie.

Three more ideas to add more vegetables into your diet:

  • Try having stuffed vegetables for dinner. I love swapping spaghetti for a red pepper when having bolognese. If you cut the top off the pepper (and cook it) and fill it with the bolognese sauce and cover with a little cheese, it’s delicious!
  • Blend the veg! Make a soup and take it to work. I like making butternut squash soup or leek and potato soup. It’s a healthy, warm lunch for this time of the year.
  • Turn vegetables into chips! I love this as well. Cut up a courgette and bake it in the oven, you might be surprised.
