Everyone is starting diets this time of the year, but I hate that word. I see it more as a lifestyle change. I’ve put together a few ways you can eat more vegetables without even noticing.
This week, I’ve had two important birthdays; my boyfriends and my mums. For birthdays like this, I try to go the extra mile and make something for them, usually cake!
I tried to make a moist chocolate cake this year for my boyfriend, and it actually turned out really well! So I thought I’d share it, recipe below:
As its autumn, I’ve been cooking with autumn veggies. Carrot cake was on my blogging list and this week I had some carrots I needed using up, so I baked some cake! My recipe is below.
Before I moved back to Nottingham, Mum gave me a butternut squash grown at her allotment. I had no idea what to do with it so I cut it in half and put it in the oven! I figured I should top it with something, so I made a vegetarian spaghetti Bolognese type topper for one half. Then made soup out of the other!
I thought I should share these recipes with you because they were so delicious!
First put the squash in the oven at 200 degrees for about an hour or so – until its soft. I scored mine diagonally and put salt, pepper, oregano and oil on top to season it.
